Kirby's Grill and Bakery is a new kind of restaurant. Our concept of upscale family is
unique. The smoke free, no alcohol environment sets us apart from our competitors.
This unique advantage is an operational expression of the Christian values that drive our
company.
Only the freshest foods, daily prepared, come from the grill and bakery at Kirby's. Each
item on our menu has been carefully selected because of its broad customer appeal.
Blend this with our commitment to make everything from scratch and you have custom-
ers who come back again and again.
At the heart of our concept is the bakery. Bread and desserts served at Kirby's will be
baked for all to see in our in-house bakery. Pies, cakes, breads and cinnamon rolls will be
baked throughout the day, creating the sight and aroma of a French bakery. The bakery
will include display windows for retail sales, a variety of coffees and its own seating area
to entice customers in for a limited menu of salad, bread and desserts. All of the bakery
products will be packaged for carry -out sales.
Convenience runs through the very fiber of our American culture, so Kirby's offers a full
menu for take-out. Each take-out order can be picked up inside our bakery or through
our convenient drive-through window.
Uncompromising service is one of our core values. Our commitment to training pro-
duces people who are capable, enthusiastic and professional. Since no alcohol is served,
the work force for servers includes capable 18,19 and 20 year olds. This enables Kirby's
to build a much longer relationship with servers than the more traditional concepts.
The original Kirby's Grill and Bakery opened to tremendous crowds in Fayetteville,
Arkansas December 19,1991. For thirty days the restaurant opened for dinner only (no
drive-through or bakery retail). This enabled the management to adjust the staff size,
food preparation levels and space requirements to ensure that our "dining in" customers
had the best dining experience possible.
In January lunch was opened. Since that time Kirby's has soared in popularity to become
the largest volume restaurant in Northwest Arkansas. This success was enjoyed in a
market that includes such national chains as Chili's, Red Lobster, Luby's, and El Chico, as
well as a host of hometown favorites.
During the first twelve months Kirby's outpaced all the regional competitors and outran
their own internal goals. At the end of the first year of business Kirby's had experienced
a 61% increase over first year projections, closing the year at $2,125,000 in lunch and
dinner sales. And the growth hasn't peaked. The Fayetteville store is posting a 17-20%
sales increase in the second year.
The increased popularity caused longer waits and some creative parking. In response, in
April of 1993, Kirby's expanded its Fayetteville operation with another forty seats and
thirty parking spaces.
It didn't take long for out of town customers to begin inquiring about other Kirby's.
After an aggressive evaluation of the Kirby's components of success, the current investor
group voted to restructure the original Kirby's concept for expansion and growth. That
restructuring was completed May 15,1993 and the decision was made to build the
second Kirby's Grill & Bakery in Little Rock, Arkansas.
