5089ORDINANCE CE N0. ;0 v I AN ORDINANCE REGULATING THE METHODS OF HANDLING DRESSED POULTRY BY POULTRY COMMISSION HOUSES, RETAIL STORES, HOTELS, RESTAURANTS AND CAFETERIAS, AND PROVIDING A FENALTY FOR VIOLATION. Be It Ordained by the City Council of the City of Little Rock; Section 1. Any establishment slaughtering poultr . where it is to be sold to any retail store, hotel, restaurant, cafeteria or other retail establishment in the City of Little Rock shall deliver all poultry in a thoroughly chilled and prime condition. Section 3. No poultry shall t;e sold or offered for sale either by wholesaler or retailer which upon inspection or puncture discloses any quantity of water or t_elatinous substance not commonly found in such poultry, and an person who shall inject or cause to be injected or otherwise inserted in any manner any such water or other gelatinous substance shall be deemed guilty of a misdemeanor. Section 4. That all scalded poultry sold in Little Rock shall be immediately chilled after slaughter, by placing same in ice water, the temperature of which shall not exceed 500 F at any time, and said poultry shall remain therein until thoroughly chilled but not to exceed six (6) hours for the specific purpose of removing animal heat. All semi - scalded poultry sold in Little Rock shall be immediately chilled after slaughter by placing same in dry refrigeration, the temperature of which shall not exceed 500 F at an,, ti..,c, and shall remiain therein until thoroughly chilled. Section 5. Upon receipt of any scalded or semi - scalded undrawn poultry by any retail store, hotel, restaurant, cafeteria or other retail establishment selling direct to the consumer, said poultry shall be immediately placed in a refrigerated box with a temperature not to exceed 480 F and kept therein until sold to the consumer, and must not be placed in water. Section 6. All dry picked poultry sold in Little Rock shall be chilled rei th dry refrigeration only, and shall be thoroughly chilled at the place of slaughtering, and shall never be placed in 1. Section 6' cont' d water for refrigerating or storing purposes. Section 7. That where a market supervisor is employed by any store or group of stores he shall be responsible to the Health Department for the sanitary condition of the markets, the quality a,'Id wholesomeness of the products handled, in any or all the markets under his supervision, otherwise the local manager shall be re- sponsible. Section 8. Any person, firm or corporation violating any provision of this ordinance shall be deemed guilty of a misdemeanor, and upon conviction in police court shall be fined not less than five ($5.00) dollars nor more than fifty ($50.00) dollars for each violation, and each day's violation shall be treated as a separate offense. Section 9. This ordinance being necessary for the pro- tection of health of the citizens of Little Fock, an emergency is declared and taxis ordinance shall be in force from and after its passage.
